The Best Part is the Peppermint Dust...

Peppermint bark makes a great gift for office workers, service people in your lives and teachers. It is so easy to make, but the final product looks so impressive, people will think you slaved for hours! I'm planning to make peppermint bark for my co-workers and hubby's co-workers and put in cute little containers. Little man is even going to get in on the action by helping to crush the candy. We like to save the leftover peppermint dust and sprinkle on top of ice cream or hot chocolate. Yummie!

Here's the super easy recipe:

INGREDIENTS
1 (12 ounce) package NESTLE® TOLL HOUSE® Premier White Morsels (or you can use dark chocolate or both and layer like the picture at right)
24 hard peppermint candies

LINE baking sheet with waxed paper.
MICROWAVE morsels in medium, microwave-safe bowl on MEDIUM-HIGH (70 percent) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth.
PLACE peppermint candies in heavy-duty plastic bag. Crush candies using rolling pin or other heavy object. While holding strainer over melted morsels, pour crushed candy into strainer. Shake to release all small candy pieces; reserve larger candy pieces. Stir morsel-peppermint mixture.
SPREAD mixture to desired thickness on prepared baking sheet. Sprinkle with reserved candy pieces; press in lightly. Let stand for about 1 hour or until firm. Break into pieces. Store in airtight container at room temperature.

Happy Pills

I'm a crazy person. At least, that's what I feel like some times. And it runs in my family. No, not really crazy (and don't take offense if you are one of me), but just clinically depressed and filled with anxiety. It's as if I don't have something to worry about in my head constantly, then I don't feel normal. Luckily, there's a pill for that. It's a bitter pill, one that I'll basically have to take the rest of my life, but I've slowly accepted that it's like any other disease, and just like diabetes or heart disease, that little pill is gonna make me better. But that little pill makes me gain weight, gives me the brain shivers when I miss it, and although I've tried to get off it multiple times, I just can't. So I guess that makes me an addict as well. But it's a pill that my grandparents and family didn't always have, and they suffer from it as well, so I should be thankful for this little red capsule of happiness...
